Where can I find instructions for applying a patch to the UBCD?
Just what do you call a patch ?
Updating something by yourself ? --> Guess it should be somewhere around the "Tutorials & How-Tos" section.
Apply one of the official xdelta patches ? --> Well there's not much to say about it, you should see the syntax on the download page itself...

Just to add to what Constance said.
Some updates to programs are as easy as replacing the old file with the new one and finding the listing in the menu.cfg files and changing the version number if you want to.
Some programs are a bit more complicated and require changing file names and such ( like Linux Boot CDs if added, but then if your updating these you probably added them yourself...)
Some require you to extract compressed image files, updating files and then recreating and recompressing the image file.
