The UBCD menu system uses Syslinux. The config files are plain text files, that can be easily edited to add extra programs (that are bootable from Syslinux: floppy/hard disk/(some) iso images, Linux kernels + initrds, boot sectors, ...
Avira Rescue CD is included in UBCD (as GUI).
Parted Magic (linux distro) shows a GUI by default too.
