Next time you can try to partition the disk with GParted (included inside Parted Magic) and copy the files to the partition from there. The copying of the files will be much faster in linux than in dos. At which step? 'Cause the "install UBCD to hard drive" step was done in the linux boot...

This is much simpler under Linux (or perhaps I've been using Linux long enough that it's warped my idea of simple :P) -- just look in ubcd/tools/linux/ubcd2usb and follow the readme.
