I'm a newbie at this so forgive a question that may have a simple answer - to more experienced hands - how can I set up the UBCD with USB support?
Not to boot from, but to use as a target so I can copy or extract items from a resident hard drive to that usb device?

Launch "FreeDOS", then enable USB support during boot up (in one of the popup dialogs).
If all goes well, USB support will be enabled and your USB device (eg. USB memory stick) will be detected and mounted with a drive letter.

That brings up a good point, can the delay at those pop-ups be increased as my slow arse misses them all the time?

You can increase the timeouts by editing \ETC\GLOBAL.SET in DOSUBCD.IMG.
The various values ending in "_TI" eg. "LFN_TI" are the timeout (in secs) for the various dialog boxes eg. "LFN_TI" is the timeout (in secs) for the Long File Name dialog box.
